Ingredients:
1 cup of Aroy-D coconut cream
1 lb of shrimp, headless
1 box of freshmore mushrooms and cut off the bottoms
4-5 Ripped lime leaves
5-6 Chopped Thai cilantro leaves
9-10 Thinly sliced galangal
1 smashed and chopped lemongrass stick
5-6 smashed scallions
2 Tablespoons Aroy-D Tom Yum Paste
2 limes freshly squeezed
5-6 Smashed Thai red and green chilis
1 tablespoon of Squid Brand Thai fish sauce
1 cup of water
Steps:
Grab a pot (we used a wok) and set over medium-high heat.
Pour coconut cream into the pot and stir in Tom Yum paste, mixing well until the colors mix.
Once the pot is simmering, add a cup of water and mix well.
Add lemon grass sticks, scallions, galangal, fish sauce, lime juice, shrimp and mushrooms. Let simmer until the shrimp and mushrooms are cooked.
Once simmering, add in lime leaves, Thai cilantro, and Thai chilis into the pot. Add more or less according to personal preference.
Ready to serve! Enjoy!
